Nutritious Rajgira Namkeen Many of us don't know that Rajgira (popped/ puffed Amaranth)
is loaded with protein, fiber, minerals and vitamins. Yes its true amaranth grain is a very impressive nutrient profile and this is my absolute favorite too. You must have tried my previous recipe of namkeen (https://www.youtube.com/watch?v=boBKq...), so now sharing a new recipe for a change with you. This namkeen is best alternative for cookies/biscuits/chips for evening snacks which is gluten free and so versatile. You can have this diet namkeen in navratri fast & any fast also. This easy namkeen recipe using amaranth seeds is an ultimate "kur mura" snack, you can munch on when you have those cravings.
Here is the recipe of my version amaranth namkeen.
Heat 1 teaspoon ghee in a pan over low heat. Add peanuts & roast until they are crispy.
Now add cashews and raisins separately & roast until light brown.
Add melon seeds to the pan and roast until browned. Keep stirring while roasting to avoid burning. In the same pan, add makhana to the pan and roast on medium heat until they are crispy (5-8 minutes). Keep stirring while roasting. Move the roasted makhana to a large bowl and keep it aside.
In the same pan add amaranth puffs and keep stirring while roasting. Now add all the ingredients in the pan.
Heat 1 tsp. ghee in a pan add mustard seeds & curry leaves and roast them until light browned just to remove the moisture from them. Add turmeric to give it a color. Pour it to the amaranth puffs.
Add salt, black pepper powder, amchur powder and chaat masala powder over the roasted nuts and seeds and toss well.
Cool the ingredients completely and store them in an airtight container.
Serve at room temperature.
