Veg Fried Rice

Fried rice has its spot on every single Chinese take-out menu .

At a quick glance, fried rice looks pretty healthy with its chopped colorful veggies and rice. But when it comes to many foods, looks can sometimes be deceiving - excessive soy sauce, refined oil, and MSG can turn this dish into an unwholesome one that you'll only want to eat as a rare treat.

If you really love fried rice but don't want to compromise your diet, you can make this version of this healthy Chinese food at home pretty quickly.

Ingredients
 Boiled Rice- 1 bowl (brown/ white)(with salt)
 Ginger- 1 tsp (grated/chopped)
 Garlic- 1 tsp (finely chopped)
 Green chili- 2 (finely chopped)
 French beans- 1tbsp (finely chopped)
 Carrot- 1tbsp (finely chopped)
 Bell peppers (red, green, yellow)- 1tbsp each(finely chopped)
 Sweet corns- 1 tbsp (boiled)
 Baby corns- 1tbsp
 Dark Soya sauce- 1 tsp
 Apple cider vinegar- 1 tsp
 Salt to taste
 Black pepper- 1 tsp
 Oil/ Ghee- 2 tsp
 Coriander leaves - for garnishing
 Spring Onion Greens- for Garnishing
Method

Heat up oil in a heavy bottom pan, add ginger.

Add garlic and green chili & let it crackle.

Then add carrot, french beans, baby corns, sweet corns, bell peppers and let them cook.

Now add boiled rice & give it a good mix.

Add salt, black pepper, soya sauce, apple cider vinegar & mix well.

Garnish with coriander leaves and serve hot.
